Ingredients

For the Chicken:

  • 1½ tbsp mustard oil
  • 1 bay leaf
  • 1 crushed green cardamom
  • 2 crushed cloves
  • ¾ tsp turmeric powder
  • 500g bone-in chicken, curry cut
  • ½ tsp salt

For the Gravy:

  • 3 tbsp mustard oil
  • 1 tsp cumin seeds
  • ½ inch cinnamon stick
  • 2 cloves
  • 1 green cardamom
  • 1 black cardamom
  • 3 whole dried red chilies
  • 2 whole garlic bulbs
  • 2 bay leaves
  • 3 medium onions, sliced
  • 15 garlic cloves, peeled
  • 2-3 crushed green chilies
  • 1 inch chopped ginger
  • 1½ tbsp coriander powder
  • ½ tsp turmeric powder
  • 2 tsp Kashmiri chili powder
  • ¾-1 tsp salt
  • 1 tsp chicken masala
  • ½ tsp garam masala (¾ tsp if store-bought)
  • 2 tbsp chopped coriander

Instructions

  1. Roast the Chicken:

    • Heat 1½ tbsp mustard oil until it smokes slightly. Add bay leaf, cardamom, cloves, and turmeric. Add chicken, fry until it browns, then add salt and fry for another minute. Set aside.
  2. Prepare the Gravy:

    • In the same pan, heat 3 tbsp mustard oil. Add cumin seeds, cinnamon, cloves, cardamoms, dried chilies, whole garlic bulbs, and bay leaves. Sauté for 1-2 minutes.
    • Add onions and sauté until translucent. Add garlic cloves, ginger, and green chilies. Cook until onions caramelize.
    • Add coriander powder, turmeric powder, and Kashmiri chili powder. Mix well.
    • Add chicken and 1½ cups hot water. Cook until chicken is tender, about 20-25 minutes.
    • Stir in garam masala and top with chopped coriander.
