Ingredients
For the Chicken:
- 1½ tbsp mustard oil
- 1 bay leaf
- 1 crushed green cardamom
- 2 crushed cloves
- ¾ tsp turmeric powder
- 500g bone-in chicken, curry cut
- ½ tsp salt

- 1 black cardamom
- 3 whole dried red chilies
- 2 whole garlic bulbs
- 2 bay leaves
- 3 medium onions, sliced
- 15 garlic cloves, peeled
- 2-3 crushed green chilies
- 1 inch chopped ginger
- 1½ tbsp coriander powder
- ½ tsp turmeric powder
- 2 tsp Kashmiri chili powder
- ¾-1 tsp salt
- 1 tsp chicken masala
- ½ tsp garam masala (¾ tsp if store-bought)
- 2 tbsp chopped coriander
